Sara Oliveira (SO) is the Research Scientist leading the 3D Food Printing and Cellular Agriculture research line. She served as INL Food Cluster Coordinator 2024. She holds a Ph.D. in Bioengineering Systems (MIT-Portugal Program, 2014) in Biomaterials and Tissue Engineering. Her early research focused on developing instructive surfaces and 3D printed scaffolds to enhance cell behavior and differentiation (3B’s Research Group and BIOtech, University of Trento). Since joining INL in 2016, she has applied additive manufacturing to design novel and functional foods, including alternative proteins. She was the PI of the M3aTD project (2020–2022, funded by the Good Food Institute) on 3D bioprinting of cultivated meat using muscle and plant-based bioinks. She is the internal PI of the InsectERA PRR project (2023–2025) and collaborates on fungi-based applications. She is the internal PI of the EU-funded FEASTS project led by IST-ID (FEASTS -Fostering European cellular Agriculture for Sustainable Transition Solutions – Horizon CL6-2023-Farm2Fork-01-13 (2023-2026). She is the responsible of the subproject Confeção Alimentar Inovadora in RCI project “IDFoods – Food System of The Future – Investigação e Desenvolvimento em Sistemas Agroalimentares Sustentáveis e Nutrição Saudável” (2024-2026). She was team-member of more 7 projects. Sara has authored 25 scientific articles, 2 book chapters, with over 1150 citations and an h-index of 18. She has delivered 28 oral presentations (16 invited), presented 18 posters, have 13 outreach activities and submitted 1 PCT patent. She co-/supervised 16 students (trainees, MSc, PhD, Postdocs). She is a peer reviewer for 14 journals in tissue engineering and food technology, Associate Editor at Frontiers in Sustainable Food Processing, and a book editor for Springer Nature. Committed to innovation, Sara participated in two EIT Food programs (TEAM UP 2021 – cultivated meat and 3D printing; EWA 2021 – personalized snacks), and plays a key role in the community as Executive Member of CellAgri Portugal, member of the Advisory Board of a cultivated meat/fish startup, and co-chaired and organizer of the 1st and 2nd International CellAgri Portugal Conference.
