I hold a Degree in Biochemistry (Complutense University of Madrid, 2003) and a European PhD (2005-2009) in Food Science and Technology at the University of Vigo. Currently, I work as Research Fellow at Food Processing and Nutrition Group at the International Iberian Nanotechnology Laboratory (INL, Braga, Portugal). Since PhD completion, I have gained interdisciplinary national and international postdoctoral research experience at different top-high research institutions in Spain, Portugal and the UK. Through these years my research activities were supported by prestigious and competitive programs in several institutions, covering disciplines from Food Science and Technology to Drug Delivery and Nanotechnology. The main topics of my research are related to Food Biotechnology, including (1) Application of probiotics and bioactive compounds (antioxidant, antimicrobial, satiating, anti-diabetic) for the improvement of the safety, health and nutritional value of foods, (2) Recovery and production of bioactive compounds and biopolymers from by-products of the marine and agriculture industrial sectors, (3) Micro/nanoencapsulation of bioactive compounds and probiotics for personalized nutrition. During these years, I have participated in more than 20 R&D Research Projects, 9 of them EU-funded projects, and 8 R&D Contracts with industrial partners, including the validation and pilot-scale implementation of technical processes developed at lab-scale. I have been the PI of one project and co-coordinated two EU projects. The results of my research activity yielded so far 45 papers published in international peer-reviewed journals indexed in the SCI (h-index of 23, 1595 citations), 8 book chapters, and more than 30 conference contributions. I am at present co-supervising one PhD student ( University of Minho), and I have so far supervised 1 Bachelor Thesis, 6 Master Projects and 10 Projects of undergraduate students. I have teaching experience with over 300 h of lecturing in Food Chemistry and Biochemistry disciplines. I have been accredited by the National Agency for Quality Assessment and Accreditation of Spain (ANECA) for University lecturing and I have applied for the I3 Certificate (High Education Ministry, Spain). This year I was ranked among the top 5000 Spanish scientific women.
