Rita Bastos holds a Biochemistry degree, an MSc in Food Biotechnology, and a Ph.D. in Sustainable Chemistry from the University of Aveiro. Her research focus has been on polysaccharide chemistry and the valuation of by-products. During her MSc and PhD studies, she researched brewer's spent yeast, driving advancements in yeast cell wall carbohydrate knowledge. Additionally, she developed yeast-derived microcapsules and investigated their interaction with the innate immune system, with the goal of enhancing spent yeast valuation in immunotherapy delivery systems. In collaboration with the industry, Rita has been conducting research on by-product valorization, development of food products, clean-label solutions, and nutritional enhancement of foods. Currently, she works in R&D at the Colab4Food Association, collaborating closely with the University of Aveiro to leverage networking between academia and the Agri-Food sector industry.
