AMPARO CELESTE GONÇALVES. PhD in Pharmacy - Bromatology, MSc in Food Toxicology and Quality Control and BSc in Biology (Wildlife Resources and Environment) by University of Lisboa. Scientific research in the field of food science and technology applied to fishery products (wild and farmed), studying several aspects: i) quality of fish/shellfish/macroalgae/seafood, namely: sensory properties, physicochemical and biological characteristics; ii) quality changes during handling, processing and storage, shelf life studies; iii) innovative technologies to fish/shellfish/seafood preservation; iv) effect of rearing conditions, diet composition/feeding strategies and slaughter methods, on the final quality of farmed fish, in particular on the taste/flavour, texture traits, nutritional profile and external appearance. Expertise also in seafood analysis to assess quality and establish quality criteria: sensory analysis and instrumental analysis [chemical/biochemical and physical (texture, colour measurements)]. Current research interests covers : development of sustainable healthy seafood; innovative solutions to upgrade and improve the quality of underutilized marine species.
