Youssef Elamine is a junior researcher (h-index = 12) with PhD in Biotechnology since 2020, who embarked on a journey that intersects biotechnology and electronic engineering, after joining the Instituto de Telecomunicações (IT) in 2023. His work, particularly on developing sensor-based approaches for food applications and electrophysiological monitoring of living cells, showcases his dedication to addressing cutting-edge challenges. At an early postdoc stage, Elamine was entrusted with a project with a budget of 29K Euros (11 Months) from the CSIC, Spain. This role tested his project management abilities and deepened his understanding of the synergy between electronic and biological sciences, especially when testing the integrity of cell layers before the determination of bioavailability, and then the nutritional value of food components. The outcome was 4 contributions about the characterization and functional properties determination of food using chemical and cell-based invitro assays. Elamine's dedication to food quality and sustainability became more pronounced through his involvement with competitive grants focusing on seafood safety. His participation in the SeafoodQual and ICHTYS projects at the Centre of Marine Sciences (CCMAR) was a pivotal moment. These projects, aimed at pioneering real-time monitoring methodologies, and allowed him to apply the vibrational techniques, namely FTIR, demonstrating his commitment to making a difference in food science. Now at the IT, Elamine continues to explore how electronics can be leveraged to solve food and biological challenges. His journey started with two contributions with 2 different multidisciplinary teams: a sensor for the estimation of potassium and botanical classification of honey, and a device for the electrophysiology monitoring of cells during wound healing. Both contributions are undergoing the first round of revision in Food Chemistry and Nature Communications, respectively. During his PhD and postdoc (4 years) journeys, Youssef has gained multidisciplinary and international experience, with proven publication records (24 articles, and 13 participations in international events), and review activities for Scientific reports (Springer Nature), Cosmetics, Antibiotics, and Molecules (MDPI), and Arabian Journal of Chemistry (Elsevier).
