Diana Luazi Matos de Oliveira trabalha actualmente como investigadora no projecto Alchemy, um projecto colaborativo entre o CBQF da Universidade Católica do Porto e a empresa americana Amyris, onde desenvolve trabalho no âmbito da economia circular através da valorização de subprodutos da cana do açúcar, com especial interesse no potencial antidiabético, anti-colesterolemico e prebiotico de compostos bioactivos provenientes destes subprodutos. Anteriormente foi investigadora premiada Marie Curie, trabalhou como pós-doc internacionalmente e conclui o seu doutoramento na área da Ciência dos Alimentos, em 2012, em Reading. UK. Actualmente tem 11 artigos em revistas especializadas e 5 capítulo(s) de livros na(s) área(s) de Ciências Agrárias, com ênfase em Biotecnologia Agrária e Alimentar, Ciências Exatas com ênfase em Química Analítica e em Ciências da Saúde e da Nutrição com enfase em microbiologia intestinal e doenças do foro metabólico.
