Jean-Michel Fernandes completed his Doctorate in Food Science and Technology and Nutrition in July 2024 at the School of Engineering of the University of Minho, his Master in Bioengineering at the School of Engineering of the University of Minho in 2016 and his bachelor's degree in Biochemistry at the School of Sciences of the University of Minho in 2014. He has published 15 articles in Q1 journals and 1 book chapter, gathering more than 200 citations in 5 years. Has received 1 award and/or honours. Participated as master student fellow in 1 research project and as research fellow in 2 projects. Works in the area of Food Science and Technology, mainly in the development and in vitro analysis of tailored food products through the application of nanotechnology, bioactive compounds, thickening agents and other to improve foods properties and safety.
