Dr.Raquel Gonçalves earned her Ph.D. in Chemical and Biological Engineering from the University of Minho (Portugal) in 2024. Her academic journey has included significant research contributions, beginning with her role as an MSc researcher in two projects conducted at the University of Porto (ICETA) and the Centre of Biological Engineering (CEB) at the University of Minho between 2015 and 2019. She has authored 22 peer-reviewed publications, 2 book chapters, and over 30 abstracts presented at national and international conferences. Her research focuses on lipid-based nanostructures for food applications, emphasizing the development of functional foods through the encapsulation of bioactive compounds in nano-based delivery systems.
