Mikel Añibarro Ortega holds a BSc degree in Chemistry (2016) from the University of the Basque Country, Spain, and a joint Master's degree in Pharmacy and Chemistry of Natural Products (2019) from the Polytechnic Institute of Bragança (IPB), Portugal, and the University of Salamanca, Spain. His exceptional academic performance during his Master's program was recognized with the highest possible dissertation grade of 20 and the Diploma of Best Finalist Student of his Master's degree (2020) from IPB. PhD in Agri-Food Science and Technology (2024) from the University of Vigo, Spain, supported by a highly competitive scholarship awarded by the Portuguese Foundation for Science and Technology. His research has focused on the chemical characterization of nutrients and phenolic compounds from Solanaceae plants, including fruits and underexplored aerial parts. He utilized advanced chromatographic and spectrometric techniques to analyze these compounds, along with a wide range of in vitro assays to evaluate their bioactivities. Mikel has an impressive academic track record, with 21 ISI-indexed publications and a national invention patent (PT117256A). His research findings have been presented in 50 scientific conferences, including 21 oral presentations, at both national and international levels. His research extensively analyzed by-products from tomato, bell pepper, and eggplant crops, leading to the identification of phenolic profiles in these plant matrices. This work highlighted their potential as valuable sources of bioactive molecules with antioxidant, anti-inflammatory, and anti-diabetic properties. Mikel has also collaborated with researchers from INIAV (Portugal) and the University of Thessaly (Greece) on innovative studies involving tomato plants. Currently, he is serving as a guest editor for a Special Issue in the journal Separations (MDPI).
