Miguel Cerqueira holds a PhD degree in Biological Engineering from the University of Minho. His PhD thesis was awarded for the best PhD Thesis by the School of Engineering of the University of Minho, which was focused on edible coating and films for dairy products. In 2011, he started as a Postdoctoral Researcher aiming for the development and characterization of bio-based nanostructures for food applications. In 2016 he joined the International Iberian Nanotechnology Laboratory (INL), where he has been working on the development of bio-based micro and nanostructures for food applications, focused on encapsulation technologies, development of gels and food structure design and active and intelligent packaging. He authored over 140 scientific articles, published 28 book chapters, two patents, and is editor of five books (h-index of 57, Scopus). He has been involved in several projects as principal investigator (PI) and team member, and until now, raised approximately 5 M¿ in funded projects and contracts with companies. He supervised more than 20 PhD and MSc students. In 2014, he won the Young Scientist Award of the International Union of Food Science and Technology. He was also ranked as a ¿Highly Cited Researcher¿ for the fifth consecutive year (2018-2022), in the field of Agricultural Sciences and in 2022, he entered the list of World¿s top 2 % of most widely cited scientists.

  2. Microencapsulation of ellagic acid from pomegranate husk and karaya gum by spray drying. Objective: The aim of this study was to obtain and characterize microcapsules with Ellagic Acid (EA) from pomegranate as core material and Karaya Gum (KG) as wall material.
