Ricardo Dias graduated in Biochemistry in 2013 and obtained its Biochemistry Master's degree in 2015 at the University of Porto. In 2020, he got his PhD in Sustainable Chemistry (former Industrial Chemistry) - a joint degree hosted by three Portuguese Universities: University of Aveiro, NOVA University of Lisbon, and University of Porto. His field of research concerns molecular nutrition and food science, with particular interest in understanding the chemical and biochemical pathways by which polyphenols modulate Celiac Disease onset. By taking advantage of the antioxidant, anti-inflammatory and protein-binding properties of polyphenols to down-regulate both innate and adaptive immune responses to gluten proteins and peptides, Ricardo Dias aims to open up new horizons concerning the rational development, applicability and valorisation of polyphenol-rich foods and industrial by-products as promising nutritional complements to a gluten-free diet. Over the past several years, he has been collaborating with several national and international institutes including the immunobiology units of the Institute for Research and Innovation in Health (Porto, Portugal), Institute of Biochemistry and Cell Biology (Naples, Italy) and the Institute of Food Sciences - a European Laboratory for Food Induced Diseases - (Avellino, Italy). From 2020 up to now, Ricardo Dias has been working on several research projects and technical approaches, mainly focused on (a) the setup and optimization of experiments for protein backbone and side-chain resonance assignment, structure determination, and dynamics analysis by liquid-state NMR (BeTASTy, DOI: 10.3030/101040462), (b) proteomic profiling, label-free quantitation, and immunological evaluation of food-triggered sensitivities and on the relationships between structure, function and bioactivity of dietary proteins (PRR mobilizing agendas, InsectERA and VIIAFOOD), (c) management of datasets for statistical analyses, biological pathway annotation, and data interpretation of metabolomic-based workflows (WHEATBIOME, DOI: 10.3030/101084344), and (d) food quality and food safety risk assessment, focusing on industrialization, consumer acceptance and regulatory considerations of anthocyanin- and carotenoid-rich wheat varieties (7th European Food Risk Assessment Fellowship cohort 2023-24). In November 2021, Ricardo Dias secured a CEEC grant by FCT (2021.01830.CEECIND/CP1662/CT0013) as well as the position as scientific advisor of the Structural Analysis Unit of the University of Porto (CEMUP).
